Day 25: Slow cooking

Yet another wedding list gift that has come along like a little fairy and sprinkled lovely tasty fairy dust on my life, the slow cooker! Slow cookers have been changing peoples lives for a very long time but they seem to be all the rage at the moment and you can get them fairly inexpensively from a lot of places. We just went for a fairly low range one from John Lewis which I believe cost around £25.

It is absolutely the perfect tool for Paleo dieter who is cheap and enjoys bulk cooking….or for normal people too. It is just so easy to throw in whatever you have in the fridge, whatever leftover veg you have in the bottom of the drawer, some meat and some chopped tomatoes. It is great for cooking for a number of people. Stick on a pot of chilli to slow cook the night before/morning for 8 hours and it will keep it warm until people arrive for lunch/dinner.

There are so many of them out there. You can cook a whole chicken, bake sweet potatoes (or normal potatoes), pulled pork, the options really are endless. I absolutely love this little guy, he really does make things easy! So get down to John Lewis, or dust off the crock pot you’ve had in the back of a cupboard and get bulk cooking lots of delicious things. You can even buy these amazing things:

Day 25: Shred Log

Breakfast -Fruit Salad

I got an early train back from Dundee this morning to get to work for 9am so I just got a fruit salad from M&S to eat when I got into the office.

Lunch – Pesto chicken & bacon salad

I made two portions of this on Tuesday night so I had the second one for lunch today.

Dinner – Sausage casserole and green beans

More leftovers for dinner as there was an absolute mountain of sausage casserole from the slow cooker. Nice to just have to reheat something up after PT tonight though.

Drinks & snacks – Bootea, approx 3 litres water, Irn Bru sugar free

Exercise – PT session which included today’s 60 burpees


Today’s top tip – When travelling on a train, try with all your might to sleep, that way you can delay the hunger and don’t have to watch other people eating bacon rolls!
